Cultivation
CULTIVATION TAKES PLACE EXCLUSIVELY WITHIN THE FARM:
The fertile soil, rich in peaty substrate, allows for minimal fertilization due to the presence of plant remains and microorganisms. The preservation of traditional crops and integrated agricultural practices, such as maintaining herbs on the levees and crop rotation, helps sustain local biodiversity and ensures the high quality of the products.
&
PROCESSING
RISERVA SAN MASSIMO RICE ALSO STANDS OUT DUE TO ITS METICOLOUS PROCESSING STAGES:
Each step, from threshing to packaging, is carried out in an artisanal manner to preserve the flavor and organoleptic qualities. We ensure quality by combining artisanal practices with innovative methods: the paddy rice is harvested at the optimal ripeness and dried at low temperatures using methane gas, preserving the quality and integrity of the grains. Each production phase is carefully monitored and consistently improved.
