The Reserve Excellencies
Surrounded by pristine nature and far from busy roads, Riserva San Massimo’s rice paddies produce four high-quality varieties of rice: Carnaroli Classico, also available in a wholemeal version, Vialone Nano, Rosa Marchetti, and the new rice line ‘I Fontanili.’
Riserva San Massimo rice, rich in organoleptic qualities, is the result of meticulous and ongoing selection.
Carnaroli Classico
Carnaroli Classico Riserva San Massimo is rice born from tenacity and passion, grown through responsible soil management and agricultural practices that respect and preserve the surrounding biodiversity. This variety is grown in the paddies of San Massimo di Sotto, surrounded by forest, where the soil is more compact, humid, and peaty. These unique characteristics create an ideal environment for cultivating Carnaroli Classico rice, enhancing its organoleptic qualities. The rice processing is carried out using the following techniques: drying with methane gas, stone husking, and modified atmosphere packaging.

Carnaroli
“I Fontanili”
In 2023, the new line of Riserva San Massimo rice, ‘I Fontanili,’ was launched. This premium-quality Carnaroli rice is grown in San Massimo di Sopra, on the Ticino terrace, known for its light and well-draining soil, ideal for enhancing the cultivation of this exceptional variety.
Each grain embodies the values of Riserva San Massimo and its agricultural practices: from organic fertilization to drying with methane gas, stone husking, and packaging in nitrogen, all within a completely recyclable package.
Rice with excellent starch release and cooking quality, characterized by a delicate hazelnut flavor, making it ideal for risottos.

Vialone Nano
Vialone Nano is a rice variety developed in 1939 through the hybridization of two varieties: Nano and Vialone Nero. Riserva San Massimo cultivates this variety in selected paddies, using sustainable agricultural practices and artisanal methods, including organic fertilization, drying with methane gas, and stone husking.
Medium-sized rice with semi-fine, round, and pearly grains, suitable for a variety of dishes, especially for both creamy and non-creamy risottos. Its consistency and high amylose content enhance both its aroma and flavor. Appreciated by chefs for its delicacy, it pairs beautifully with fish risottos, enhancing the subtle flavors of the sea.
