Identità Golose 2023: Riserva San Massimo presents three signature risottos.

On the occasion of the 18th edition of Identità Golose (January 28 to 30), three chefs will take turns at the stand, each interpreting one of the iconic first courses of Italian cuisine: the authentic Carnaroli rice.

Saturday, January 28 will kick off the event with Executive Chef Alberto Quadrio of the 10_11 Portrait Milano restaurant, who will present a sweet and bitter almond risotto. Sunday, January 29 will feature Chef Francesco Baldissarutti from the Best Western Hotel “Tre Torri” in Altavilla Vicentina (VI), preparing a Valpolicella risotto with Bassano broccoli and Katsuobushi. Finally, on Monday, January 30, Chef Antonio Biafora from the Hyle restaurant in San Giovanni in Fiore (CS) will delight us with a risotto made with Carnaroli Riserva San Massimo, yeast garum, cypress emulsion, and Java pepper.
