Carnaroli Classico
We are one of the few Italian farms that cultivate Carnaroli Classico. Since 2005, our Director Dino Massignani has overseen a careful selection process, preserving the original variety of the seed. We commit to a cultivation method based on non-intensive production techniques, with zero environmental impact and complete respect for nature.
For this reason, the authentic Carnaroli Classico from Riserva San Massimo is the result of a delicate balance between nature, human labor, and innovation.
Why Classico?
There are 180 recognized varieties of rice according to sector regulations. Carnaroli Classico rice includes several varieties that are similar in grain size, but differ in seed origin and organoleptic qualities.
Carnaroli Classico is a fine and delicate variety with a long ripening period, and a growth cycle that lasts approximately 165 days. The plants reach a height of 175 cm, and their cultivation involves several production risks.
Despite this, Riserva San Massimo has chosen quality by producing authentic Carnaroli Classico on approximately 100 hectares, while developing a unique system for cultivation, fertilization, and harvesting.
The Terroirs
After years of experience and careful analysis of the productivity of each paddy field, we have selected two distinct areas within the farm, each characterized by unique soil properties. These differences contribute to the taste and quality of the rice, shaping its character, much like the Crus in the world of wine.
In the area of the farm known as San Massimo di sotto, the soil has the ideal characteristics for the growth of Carnaroli Classico: a compact, humid texture that supports the plant in an optimal way. This is due to both the geological conformation of the Ticino Valley, characterized by typically peaty soil, and the spring waters, as well as the plants and fruits that become natural fertilizers once decomposed.
The area located on the Ticino terrace, known as San Massimo di sopra, is characterized by lighter, more draining soil, ideal for growing Carnaroli ‘I Fontanili,’ the new rice production line of Riserva San Massimo.
In this perfect balance, we intervened by preserving the original conformation of the territory, without distorting the dimensions of the rice paddies.

Cultivation and processing
All stages of Carnaroli Classico cultivation are carried out with respect for biodiversity, using agricultural practices that preserve the local ecosystem and ensure responsible management of soil and water resources. The rice is irrigated with water from our springs and nourished by the rich organic matter in the soil. The processing is based on innovative and sustainable techniques such as drying with methane gas, a long process of fine-grained stone husking to avoid stressing the grain and packaging in a modified atmosphere.

Carnaroli Classico from Riserva San Massimo is renowned for its exceptional organoleptic qualities and is highly regarded by top chefs for preparing risottos. During cooking, the rice gently releases its starch, absorbing the flavors of the ingredients while maintaining compact, homogeneous grains even after cooling. Their consistency guarantees an excellent result with the first bite.
