“I Fontanili” by Riserva San Massimo, a rice crafted with passion and tenacity



Carnaroli “I Fontanili”
After carefully observing the growing demand for Carnaroli rice, we decided to introduce a second selection of premium-quality Carnaroli alongside our Carnaroli Classico Riserva San Massimo.
Our new rice line, “I Fontanili,” is the result of tenacious and passionate work, featuring production processes that are respectful of the environment, the local territory, the consumer, and the product itself. The result is a rice with a good starch release and excellent cooking quality, characterized by a subtle hazelnut flavor, making it ideal for risottos.
The Terroirs
Our experience has enabled us to thoroughly analyze the various terroirs on the farm, identifying two distinct areas with different soil characteristics that influence both rice cultivation and yield, as well as providing unique organoleptic qualities.
The Carnaroli rice selected for the “I Fontanili” line is grown in the area known as San Massimo di sopra, a Ticino terrace, characterized by light, well-draining soil, which is ideal for enhancing the cultivation of this variety.
In the area of the farm known as San Massimo di sotto, the soil is more compact and humid, characteristics that are ideal for the growth of Carnaroli Classico, as it provides optimal support for the plant.

Cultivation and processing
Each grain of rice embodies the values of Riserva San Massimo, expressed through sustainable and environmentally friendly practices: from organic fertilization and drying with methane gas, to stone husking and nitrogen packaging in fully recyclable materials.
