Riserva San Massimo has renewed its partnership with BITE, the festival created by Salvatore Morello, Inkiostro*’s chef, and Francesca Poli, entrepreneur and restaurant’s owner.
For its second edition, the festival has come back to the Antica Corte Ortalli in Sant’Ilario d’Enza with a program built around two moments: the open-air celebration on September 15 and the gala dinner the following evening. More than 80 Italian and international professionals took part, from established chefs and rising talents to pizza makers, bakers, bartenders, pastry chefs, and gelato makers.
On September 15, the chefs cooked their own “bite” live — a small taste created for the occasion that captures their style and their story in a single mouthful. Carnaroli Classico was chosen and cooked by:
Nino Rossi of Qafiz*: risotto with elderflower, clams, and Sichuan pepper;
Vincenzo Manicone of Tancredi*: risotto with koji, monkfish liver, and licorice;
Davide Caranchini of Materia*: chilled risotto with green olives, coriander seed, and tomato;
Guido Paternollo of Pellico 3: risotto alla milanese with chicken jus and cardamom;
Marco Stagi: risotto with green zucchini cream, eucalyptus essence, and marinated fruit spheres.
“It was a real pleasure to renew our collaboration with BITE, an event that brings fine dining out among people and creates a direct conversation between the chefs and the public” says Maria Antonello, owner of Riserva San Massimo.
